Matcha Crème Brûlée

Ingredients:
- 2 cups of cream 30-36%
- 4 egg yolks
- 1/3 cup of sugar
- 1 teaspoon vanilla
- 1 teaspoon premium matcha (sifted)
- granulated sugar for caramelization
Preparation:
1 Cream mixture
- Heat the cream with vanilla in a pot (do not bring to a boil).
- In a bowl, beat the egg yolks with the sugar.
- Add the hot cream slowly, stirring vigorously.
2 Matcha
- In a small bowl, mix the matcha with 3 tablespoons of the hot mixture to form a smooth paste.
- Add the matcha paste to the rest of the cream and mix.
3 Baking
- Pour the mixture into ramekins.
- Place them in an ovenproof dish and pour hot water up to half their height (water bath).
- Bake for 35–40 minutes at 150°C , until the center is set but still slightly jiggly.
4 Caramelization
- Once cooled, sprinkle each crème brûlée with a thin layer of sugar.
- Toast the sugar with a blowtorch until a golden, crispy crust forms.
Pass
Serve immediately after caramelizing – the contrast of the cold cream and the hot crust is at its best.
